So kudos to Katy - she has a very good memory and is very persistent for the things that are important to her! Following up on her declaration that she wanted to set up a bakery shop downstairs so she could make more money and raise money for Mama and Dada, she immediately wanted to put her plan into action the next day. I have been unwell this week so unable to help out, and I was very apprehensive to have Katy set up her shop and have nobody come to buy anything! How discouraging would that be. So we tried to delay her grand plans, but she wasn't having any of that. I told her she would first have to go see Management to get permission to set up the stall (not really true), and rather than be put off, she insisted on marching off to the Management Office right there and then to ask permission (nobody was there).
Katy also insisted that she had to make her own cupcake according to her own recipe. She's been concocting her own interesting creations for a while now. Once in a while, they actually turn out great, and she has definitely improved from her first attempts, which mixed everything under the sun together, and not in a good way.
These cupcakes were not too bad. Spongey in texture and a little salty (so she said they would not be suitable for Papa, but they would be big sellers). Pretty amazing though considering she really refuses to use any recipes or accept any guidance. It must be all those baking sessions with Nana! Nana's baking genius has definitely rubbed off on Katy.
She only grudgingly accepts help from Tia or Naan, and only because we insist.

Finally the logistics of building a shop gave Katy pause for thought and
she agreed to wait until Saturday when Dada would be able to help (and
Mama would be able to hide around the corner and give money to passersby
so they could buy Katy's salty cupcakes). Whew! Thank goodness. But Katy was rightly proud of her creation and explained that they are to test the market.
